Yeast is a eukaryotic organism that is single-celled and is classified under the kingdom of fungi. Most of the species of yeast reproduce asexually by budding. The most common species of yeast is the Saccharomyces cerevisiae which is used for fermentation and baking purpose. Ascomycetes are also called sac fungi because these fungi produce elongated sacs called asci. This is the largest subdivision of fungi and contains some very well-known genera such as Penicillium, Saccharomyces, Aspergillus, Neurospora, etc
